Since most of you are meal prepping today, I would like to share this recipe. This is one of the meals that I am prepping for this week.
This summer I decided to explore vegan food options. I would not consider myself vegan or even vegetarian, yet… I am exploring recipes so that when I finally go vegan it won’t be so difficult. This meal is my absolute favorite, and its so easy.
Ingredients: 1 cup of Quinoa, 1 green bell pepper, 1 red bell pepper, 1 sweet onion, 2 cups of kale, 1 cup of carrots, Vegan butter, pink himalayan salt, cayenne pepper
Directions:
- Boil Quinoa
- Saute vegetables together in vegan butter( boil kale separately)
- mix everything together in a skillet
- Add pink himalayan salt and cayenne pepper to taste
